Do you ever have times where it is almost shopping day and you have NOTHING in the cupboard and the kids are FAMISHED and want something DELICIOUS?
Today was one of those days in our house.
I had nothing 'snacky' in the house and the children wanted to make something. YIKES!!! I grabbed out a bunch of ingredients and thought hmmm... this has the makings of an Anzac. I didn't have enough oats to do my usual recipe so I decided to experiment with the 2 kg of Wholemeal spelt flour I had sitting in the cupboard!
The end result? Oh my goodness!!! It was probably by far, the best Anzac biscuits I have had for awhile! So I just had to share with you.
They are super easy to make too.
1 cup of melted butter
1 cup wholemeal spelt flour
1 cup rolled oats
1 cup coconut sugar
1 cup shredded coconut
2 Tbsp. pure maple syrup
1 tsp pure vanilla extract
a pinch of bicarb soda
Preheat oven to 175° C (350 °F) or 150° C (300°F) fan forced.
Combine all ingredients in a bowl and mix well.
Grab about a tablespoon of mixture and roll into a ball.
Place into a tray lined with baking paper and flatten slightly.
Repeat until all mixture is used.
Place in oven and bake for approximately 25 minutes until lightly golden.
Remove from oven and allow to cool (If you can wait that long, they are delicious warm too).
